Sailing the Coast of Mallorca with Gill Meller

For chef, writer, and sailor Gill Meller, it is exactly this kind of day that shapes the way he cooks.

The best days on the water tend to follow their own pace.

We slipped lines from Palma early, with the harbour still quiet and the first light moving across the marina. Once clear of the breakwater, the boat settled under sail, tracking steadily along the Mallorcan coastline as the morning breeze filled in.

For chef, writer, and sailor Gill Meller, it is exactly this kind of day that shapes the way he cooks.

Time on the water sharpens your attention to detail. Wind angle, sail trim, the movement of the boat, and the choice of anchorage later in the day. Cooking follows a similar discipline, built around feel, timing, and a close read of the conditions around you.

Throughout the sail, inspiration came naturally from the coastline itself and the market stalls of Palma that morning.

Wild rosemary and fennel gathered near the shoreline. Tomatoes, olives, citrus, and almonds. Two sea bass, fresh squid, and local botifarró, all brought aboard with little more than olive oil, sea salt, cracked black pepper, and the confidence to let the ingredients speak for themselves.

Some of it was prepared simply in the galley while under way, the rest left for later once the anchor was down.

By late afternoon, with the boat settled in the bay and the light softening across the water, everything moved ashore.

The sea bass and squid were finished over fire with rosemary and lemon, joined by slices of botifarró, grilled vegetables, good olive oil, and warm bread. The kind of meal that makes perfect sense after a steady day under sail.

Nothing overworked. Nothing unnecessary. Just the ingredients of the island.

That is what makes Gill’s approach feel so natural on the water. It is simple, considered, and shaped by whatever the day brings.

Once the sails are down and the boat is settled at anchor, the day carries on through cooking, gathering around the fire, and staying outside until the last of the light fades behind the headland.

It is this honest connection between sailing, food, and place that defined our time with Gill in Mallorca.
